Cauliflower Chicken Casserole

My husband wanted to help me cook dinner last night, so he chopped up some chicken breasts, celery and onions and sauteed those while boiling some cauliflower and then mashed it, and I made a casserole out of it adding tomatoes, cheese, and balsamic vinegar! Read more !
Ingredients:
1 head cauliflower, boiled and mashed
2 heaping tbsp. fat free ricotta cheese
season w/ garlic powder and herbes de provence
cooking spray
2 cubed boneless skinless chicken breasts (thighs would be good too)
1 chopped onion
4 stalks celery
3 heaping tbsp. chopped garlic
1 can italian diced tomatoes, mostly drained
balsamic vinegar
grated parm cheese
Directions:
1. Mix 1st 2 ingredients and put in casserole dish (I used stoneware)
2. Saute next group of ingredients until thoroughly cooked, waiting til the end to add tomatoes. Put on top of cauliflower in casserole dish.
3. Drizzle balsamic vinegar and sprinkle w/ cheese.
4. Bake 375 until cheese is toasty.
