Cauliflower-Cheese Soup

A great recipe in of itself- melts in your mouth. super yummy and a great way to get kids to eat their veges.
Ingredients:
1 large potato, peeled and diced
1 large cauliflower, broken into florets
1 medium carrot, peeled and cut
3 medium garlic cloves
1 1/2 cups onions, chopped
1 1/2 teaspoons salt
4 cups water
2 cups grated cheese
3/4 cup milk
1/2 teaspoon caraway seed
black pepper
Directions:
1. place potato, cauliflower except 2 cups for later, carrot, garlic, onion, salt, and water in sauce pan.
2. bring to a boil and then simmer until everything is tender.
3. put everything in a blender and put back into a saucepan.
4. steam the rest of cauliflower until tender.
5. add cauliflower to the pureed and top with cheese.
