Cauliflower Casserole

CAULIFLOWER CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cashion Estate in Terrell, Texas in 1996.
Ingredients:
2 head cauliflower
2/3 pound bacon
1 bunch green onions
1 cup sour cream
1/2 stick butter
1 clove garlic minced
1/4 teaspoon salt
1/2 teaspoon white pepper
2 cups grated cheddar cheese divided
Directions:
1. Cut up the cauliflower and steam until soft.
2. While the cauliflower is cooking cut bacon up into small pieces and fry.
3. Chop onion up fairly fine including the green portion.
4. Drain cauliflower well then add butter and sour cream.
5. Use a mixer to mash cauliflower until creamy.
6. Add bacon bits, green onion, garlic, salt, pepper and 1-1/2 cups grated cheddar.
7. Mix well and pour into large casserole dish then top with remaining cheese.
8. Bake at 350 for 30 minutes then serve immediately.
