Ingredients:
3 zucchini, grated
1 green apple, grated
1/2 head cauliflower, grated
2 green onions, chopped
1/2 cup toasted slivered almonds
1/4 cup chopped fresh cilantro
1/4 cup lime juice
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon poppy seed (to garnish)
Directions:
1. In a large bowl combine all of the salad ingredients.
2. In a small bowl whisk together all of the dressing ingredients. Taste and adjust seasonings.
3. Pour dressing over salad. Add poppy seeds and toss to combine.
