Idiot Yam Curry from Addicted to Curry.
Ingredients:
16 oz yogurt
3 cups sweet potatoes, cubed
8 cups cauliflower, florets
1 1/2 cups tomatoes, chopped
1 pepper serrano
1/8 tsp turmeric
1 tsp coriander
2 tsp fennel seed
3 tbsp ginger
6 tbsp garlic
2 tbsp olive oil
1 1/2 cups onion
1 tsp red pepper
1 tsp kosher salt
1 cup water
Directions:
1. Mince ginger and garlic. Finely chop onion. Caramelize garlic, ginger and onion in oil.
2. Add spices (fennel, coriander, turmeric and red pepper)and stir. Add minced serrano, cubed yams, florets of cauliflower, chopped tomatoes and water.
3. Simmer until liquid is low and vegetables are soft.
4. Add yogurt and salt to taste.
