Castro Estate Buttermilk Popovers

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Castro Estate in Garland, Texas in 1992. Have made these on severla occasions and they are extremly good.
Ingredients:
1-1/4 cup buttermilk
1 cup flour
3/4 teaspoon salt
1 teaspoon sugar
1 tablespoon oil
2 egg yolks beaten
2 egg whites beaten
1 teaspoon baking powder
Directions:
1. Slowly beat flour into buttermilk so it does not lump. Add salt, sugar, oil and beaten yolks and let rest 10 minutes. Oil iron popover forms leaving a little oil in each then preheat them. Whip egg whites stiff then add baking powder. Combine with flour mixture. Fill forms to the top and put in oven for 10 minutes. Reheat heat to 350 and bake another 20 minutes.
2. Incredibe popovers loaded with great flavors. The buttermilk makes these very creamy, very tasty and very delightful.
