Casserole - Chicken Parmesan Casserole

You can alter the vegetables combination to your personal taste in this casserole. Just remember to end up with a total of 1 cup total of vegetables. Using Catelli Smart Pasta, Whole Grain or Whole Wheat Pasta raises the Fiber levels.
Ingredients:
2 breasts, chicken, meat only (4 - half breasts, boneless/skinless)
1/2 cup fat free italian dressing (kraft)
1/2 cup brocolli
1/2 cup carrots
2 cups rotini (i use catelli smart pasta, rotini)
1 cup pasta sauce (i use ragu, old world style smooth pasta sauce)
19 oz tomatoes, canned, stewed (i use aylmer italian style - canned tomatoes)
1 cup mozzarella, part skimmed, shredded
Directions:
1. Fillet chicken (you should end up with 6 pieces)
2. Marinate chicken fillets in fat free Italian Dressing (or any other fat free dressing you prefer).
3. Grill chicken until golden brown.
4. Cook pasta, brocolli & carrots together in one pot until pasta is al dente. Drain.
5. Pour Pasta in casserole dish.
6. Combine tomatoes & Spagetti Sauce together (I prefer to mash the tomatoes but you can leave them whole if you like)
7. Cover pasta with 2/3 of the sauce mixture
8. Lay chicken pieces over top of pasta
9. Cover with the remainder of the sauce mixture
10. Sprinkle top of casserole with mozzarella
11. Cover
12. Bake for 45 minutes to 1 hour (until mozzarella begins to brown)
