My filipina Mother-in-law taught me how to make this filipino dessert and it is soo good. Sad to say, but I can eat a whole tray in a day if I let myself. Most of the ingrediants can be found in an asian market.(RecipeZaar doesn't have Macapuno strings in their recipe list so I added it in parentheses next to coconut milk).
Ingredients:
2 (16 ounce) packages cassava (will come in frozen package but defrost to make cake)
1 (14 ounce) can condensed milk
1 (12 ounce) can evaporated milk
1 (14 ounce) can coconut milk
1 (12 ounce) jar macapuno strings
1/4 cup butter (melted)
1/3 cup sugar
2/3 cup glutinous-rice flour
3 eggs (beaten)
Directions:
1. Pre-heat oven to 325°F.
2. Mix all ingrediants in a larage mixing bowl(make sure everything is well incorporated).
3. Grease the bottom of a larage 13x10 baking dish.
4. Pour mix in to greased 13x10 baking dish and place in oven at 325 for 1hour15min.
5. Remove and cool for 30min to 1hr.
6. Cut into equal squares. Serve and enjoy! (consistency of cake will be Glutinous).
