A fast and simple side dish for two.
Ingredients:
1/2 cup beef broth or 1/2 cup chicken
2 tablespoons carrots, shredded
2 tablespoons celery, finely chopped
2 tablespoons onions, minced
1 garlic clove, minced (small)
1 1/2 teaspoons butter
1/8 teaspoon black pepper
1/2 cup instant rice, uncooked
1/8 cup cashews, chopped
Directions:
1. In a small saucepan, combine broth, carrot, celery, onion, garlic, butter and black pepper. Bring to a boil; lower heat and simmer for 3-5 minutes then remove from the heat. Stir in rice; cover and let it stand for 5 minutes or until the liquid is absorbed. Sprinkle with cashews and some fresh minced parsley.
