This is the most incredible salad. I got this recipe from a co-worker who brought it to one of our potlucks a few months back. Warning: It is addicting if you love peas and cashews like I do. Enjoy.
Ingredients:
3/4 cup vegetable oil
1/4 cup cider vinegar
1 garlic clove minced
3 teaspoons dijon mustard
1 teaspoon worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon fresh lemon juice
1/2 teaspoon freshly ground black pepper
1/2 teaspoon granulated sugar
10 ounces frozen peas thawed
2 celery ribs thinly sliced
3 green onions thinly sliced including some of the tops
1/2 cup sour cream
4 bacon strips cooked and crumbled
3/4 cup chopped cashews
lettuce leaves and tomato wedges
Directions:
1. For dressing combine the first nine ingredients in a small bowl then mix well.
2. Cover and refrigerate 1 hour.
3. In large bowl combine peas, celery and onions.
4. Combine sour cream and 2 tablespoons of the dressing and mix well.
5. Fold into the pea mixture and just before serving stir in bacon and cashews.
6. Serve on lettuce leaves with a tomato garnish.
