Cashew Chicken Stir Fry

Ingredients:
1 pound(s) chicken breasts
1 onion chopped
2 stalk(s) celery
1 package(s) pea pods
1 package(s) carrots - small baby
1 package(s) mushrooms
1 package(s) water chestnuts
1 cup(s) cashews
1 tablespoon(s) corn starch
2 tablespoon(s) soy sauce
2 tablespoon(s) vegetable oil
1 cup(s) chicken broth
Directions:
1. Slice chicken 1/8 thick, 2 long
2. Marinate chicken in 1 Tbs corn starch and 2 Tbs soy sauce
3. Slice celery, carrots and onion in bite size pieces
4. Sauce: Blend 2 Tbs corn starch and 1 cup chicken broth
5. Heat stir fry pan on medium. Add 1 Tbs oil and cashews. Stir 30-60 seconds
6. Remove from pan
7. Heat 1 Tbs oil to high. Add chicken. Stir to golden brown 1-2 minutes
8. Remove from pan
9. Heat 2 Tbs oil to high. Add vegetables. Put lid on pan. Shake.
10. Uncover. Cook 2-4 minutes longer
11. Return chicken and sauce to vegetables until it boils. Add cashews
