This recipe works great with peanuts too. I use a 4 1/2 qt. heavy saucepan and make sure to stir constantly or the nuts can scorch.
Ingredients:
3 cups sugar
1 cup white corn syrup
1 cup water
1/2 cup butter
2 1/2 cups cashews
1 teaspoon vanilla
1 teaspoon baking soda
Directions:
1. Boil sugar, syrup, and water to a hard boil, 254 degrees in a heavy saucepan.
2. Add butter and peanuts and cook to 300 degrees or hard crack, stirring constantly.
3. Remove from heat and add vanilla and baking soda, stir well and pour onto a cookie sheet lined with parchment paper.
4. When cool break into pieces and store in an air-tight container.
