Found this on the side of the couscous box, but made a few changes. This recipe makes enough to bring to a potluck or picnic.
Ingredients:
3 cups cooked couscous
2 cups tomatoes, diced
2 cups cucumbers, diced
1 cup green onion, chopped
2 cups cooked garbanzo beans
1/2 teaspoon black pepper
1 cup kalamata olive, halved
1/2 cup olive oil
3/4 cup lemon juice
4 garlic cloves, mnced
1 teaspoon salt
chopped fresh mint, to taste
Directions:
1. Combine all ingredients and refrigerate until serving.
