Ingredients:
2 carrots, peeled
2 tablespoons chopped fresh parsley
2 tablespoons fresh orange juice
1 1/2 teaspoons lemon juice
1 1/2 teaspoons extra-virgin olive oil
1/8 teaspoon salt
1/8 teaspoon cayenne
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cumin
1/8 teaspoon black pepper
Directions:
1. Thinly slice the carrots using a mandoline or a sharp knife. Place in a mixing bowl along with the remaining ingredients. Toss well. Stored in a sealed container in the refrigerator, will keep for three days.
