I have had this recipe for about 8 years. It is a family favorite, even the ones who are not crazy about carrots!
Ingredients:
1 lb. carrots, chopped
1/4 cup butter, melted
1/2 cup sugar
1 tbsp. plus 1 1/2 tsp. flour
1/2 tsp. baking powder
1/2 tsp. vanilla
2 eggs, beaten
Directions:
1. Preheat oven to 350F.
2. In a saucepan,over medium heat,Cook carrots until tender, drain and mash.
3. Add all th other ingredients.
4. Pour into a 2-quart casserole dish.
5. Bake for 30 minutes.
6. Sprinkle with powdered sugar when cooled.
7. NOTE...
8. I sometimes add raisens for a change.
