Ingredients:
5 medium carrots, peeled and cut into sticks (about 1 lb)
1/4 cup water
1 tablespoon olive oil
3 garlic cloves, minced (about 1 tbsp)
1/4 cup fresh parsley, chopped
1 tablespoon fresh basil or 1 tablespoon fresh tarragon or 1 tablespoon fresh dill, chopped
1/4 teaspoon salt and pepper
Directions:
1. Combine carrots, water, oil and half of garlic in heavy saucepan.
2. Cover and simmer over medium-low heat for 14 minutes or until carrots are tender-crisp.
3. Stir in parsley, basil, remaining garlic, salt & pepper.
4. Cover and cook 5 minutes or until carrots are tender.
