Carrots Au Gratin

A cheesy family tradition.
Ingredients:
1/2 cup crushed seasoned croutons
2 tablespoons butter
1/3 cup chopped onion
3 tablespoons flour
1 teaspoon salt
1/8 teaspoon ground black pepper
1 1/2 cups milk
1 cup grated cheese (velveeta)
4 cups cooked carrots, rounds
1 teaspoon parsley flakes
Directions:
1. Heat oven to 350 degrees.
2. Saute onions in butter until tender.
3. Turn heat to low and blend in flour, salt and pepper.
4. Gradually add milk and stir until thick.
5. Add cheese and stir until melted.
6. Stir in carrots and parsley.
7. Pour into shallow baking pan and cover with croutons.
8. Bake uncovered for 20 minutes.
