Ingredients:
2tbs.chopped shallot(from 1 med)
3tbs. unsalted butter ,divided
1lb.carrots,cut diagonally into 1/2 thick pieces
1lb. brussel sprouts,halved lengthwise
1/3c. water
1tbs.cider vinegar
Directions:
1. Cook shallot in 2 Tbs. butter in a 12 heavy skillet over med-high heat,stir occasionally until softened 1-2 mins. Add carrots,brussel sprouts,3/4tsp salt and 1/2 tsp pepper and cook,stir occasionally until vegetables begin to brown,3-4 mins.
2. Add water and cover skillet,then cook over med-high heat until vegetables are tender,5-8 mins. Stir in vinegar,remaining tbsp. of butter and salt and pepper to taste.
