Ingredients:
8 large carrots
1/2 cup honey
4 tablespoons oil
lemon rind, grated
1 sweet potato
4 tablespoons sugar
ginger
Directions:
1. Slice carrots and sweet potatoes and cook 10 minutes in boiling salted water just to cover.
2. Add honey, sugar and oil. Cook gently until liguid is absorbed and carrots slightley glazed,about 30 minutes.
3. Sprinkle with lemon rind and ginger.
