My mum gave me this recipe. I absolutely love it. It's freezeable too so you can make a big pot, freeze it in portions sizes and enjoy it later when you don't feel like cooking.
Ingredients:
1 lb hamburger
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1/2 teaspoon salt
1/2 cup celery, sliced
2 3/4 cups carrots, grated
1 quart tomato juice
1/2 cup water
1/2 teaspoon garlic salt
1 teaspoon sugar
1 1/2 teaspoons pepper
1/8 teaspoon marjoram
2 cups cream of celery soup (i use a 10 oz condensed soup can with 1/2 cup water)
grated mozzarella cheese, for topping
Directions:
1. Brown hamburger and onion.
2. Drain.
3. Mix all ingredients in a big pot.
4. Stir occasionally.
5. Simmer until carrots are desired tenderness.
6. Do Not Boil.
7. Top with grated mozzarella cheese if desired.
