Creamy carrot soup with very few ingredients. Low calorie and filling.
Ingredients:
8 large carrots
1/4 cup onion
2 stalks celery
8 cups water
1 teaspoon salt
Directions:
1. Chop carrots, celery and onion. Put all ingredients in a 4 quart pot with a cover. Bring to a boil, then turn it down and simmer for 2 hours or more. Puree carrots, onions and some of the liquid in a food processor or blender to make it nice and creamy. Put everything back in the pot and stir. Reheat as needed.
