Carrot Soup

Ingredients:
1 tablespoon butter
1 large onion, chopped
4 -5 medium carrots, sliced thin
3 1/2 cups low sodium chicken broth
1/4 cup uncooked white rice
Directions:
1. Saute onions & carrots in butter,untill onions are translusent.
2. Add broth.
3. Bring to a boil.
4. Add rice & stir.
5. Reduce heat to a low simmer& cover.
6. Cook 30 minutes or until carrots are soft.
7. Cool slightly.
8. Puree entire mixture.
9. Return to pot & simmer till warm.
10. Serve with fresh ground black pepper & oyster crackers.
11. If desired add a little milk,sour cream or plain yogurt.
