Carrot Soup

Great comfort food that has a wonderful thick creamy texture. Easy to make, delicious and healthy!
Ingredients:
2 tablespoons butter
1 clove garlic, minced
1 medium onion, finely chopped
2 1/2 cups chopped carrots
2 mcintosh apples, peeled,cored and chopped
2 celery ribs, chopped
1/2 cup long grain rice
2 tablespoons chicken bouillon
parsley (optional)
salt (optional)
4 cups water
Directions:
1. Melt butter in a pan, saute onion, celery and garlic until tender.
2. Add water, bouillon, carrots, rice, and apple.
3. Bring to a boil.
4. Cover and simmer for 25 minutes or until carrots are tender.
5. Blend in blender.
6. Add salt and parsley to taste.
