This is incredible. I got it from a friend, and it's become one of my favorites. You could almost use it for dessert. A guaranteed way to get kids to eat carrots.
Ingredients:
1 lb carrot, peeled,sliced,boiled until tender
3/4 cup sugar
1/2 cup butter
3 eggs, well beaten
1 tablespoon flour
1 teaspoon baking powder
1 teaspoon vanilla
Directions:
1. Drain and mash carrots until fluffy.
2. Add other ingredients.
3. Mix well.
4. Pour into greased casserole dish.
5. Bake at 350 for 45 minutes.
