Wonder for any occasion. Can be made for Passover if you use Matzoh Meal instead of flour
Ingredients:
280 ounces canned carrots
70 ounces margarine
10 cups sugar
52 eggs
17 1/2 teaspoons baking powder
52 1/2 tablespoons flour
17 1/2 teaspoons vanilla
Directions:
1. Drain Carrots.
2. Melt Margarine.
3. Add Carrots to margarine. Puree all ingredients in processor or blender (in batches).
4. Pour into Greased pans and bake 45 Min at 350 degrees.
