CARROT SALAD WITH LEMON DILL DRESSING This recipe came from an Estate sale. I obtained it when I purchased the family collection from the Champion Estate in Dallas, Texas in 1991.
Ingredients:
1/2 cup vegetable oil
1/4 cup lemon juice
2 tablespoons minced fresh dill
1 teaspoon salt
32 ounces frozen crinkle cut carrots thawed
Directions:
1. Combine first 4 ingredients in a large bowl.
2. Stir with a wire whisk until blended.
3. Add carrots and stir gently to coat.
4. Cover and chill.
