A deliciously different side dish for an alfresco meal.
Ingredients:
500 g carrots
1/2 cup dates, chopped finely
1 orange, juice of
1 tablespoon extra virgin olive oil
1/2 teaspoon ground cumin
salt and pepper
1/2 cup coriander, torn
Directions:
1. Soak the dates in the orange juice.
2. Grate the carrots coarsly.
3. Toss with all remaining ingredients.
