Ingredients:
2 cups unbleached white flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 teaspoon cinnamon
1/2 cup raisins
1 egg, whole
1 teaspoon vanilla extract
1 cup soy milk
1/2 cup applesauce
2 cups grated carrots
1 egg white
Directions:
1. Preheat oven to 350.
2. In a large mixing bowl, combine the dry ingredients. Add raisins. Make a well in the center.
3. In a separate bowl, lightly beat egg and egg white. Stir in vanilla, milk and applesauce. Fold in carrots.
4. Add wet ingredients to dry ingredients; stir just until well blended. Pour batter into papered muffin cups. Bake 25-30 minutes or until toothpick comes out clean.
