A good breakfast muffin
Ingredients:
1 cup sugar
2 eggs
1 1/2 c flour
1 c grated carrot
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2/3 c oil
1 tsp vanilla
1/2 c drained crushed pineapple
(double recipe & use 1 small can)
