Adapted from an old Martha Stewart cookbook bought at a used book sale. You can make 24-30 small muffins or about 12-16 regular size.
Ingredients:
3/4 cup all purpose flour
1/4 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/4 tsp baking soda
1/3 cup vegetable oil
1/2 cup sugar
1 egg
1/2 cup grated carrots
1/2 cup chopped walnuts
Directions:
1. Preheat oven to 350.
2. Grease your muffin tins.
3. Mix together dry ingredients and set aside.
4. In mixer bowl, add egg, oil, and sugar and blend together.
5. Gradually mix in dry ingredients.
6. Stir in carrots and walnuts.
7. Bake for 20 minutes or until a toothpick comes out clean if you stick it in the middle of one of the muffines.
8. Serve hot or cooled as desired.
