Carrot Loaf

This isn't my recipe but it's good enough to share! ;)
Ingredients:
2 cups cooked, mashed carrots
2 slightly beaten eggs
1/2 tsp salt
1/4 tsp pepper
2 tbsp sugar
1/4 cup evaporated milk
Directions:
1. Combine all ingredients and mix thoroughly.
2. Place in a buttered casserole or mold.
3. Set in pan of hot water. Bake in 350 degree oven until firm, about 45 minutes.
4. Turn loaf out onto a hot platter and surround with buttered peas or just slice in the pan and serve.
