CARROT GINGER MUFFIN
Ingredients:
1 cup whole wheat flour
1 tsp baking powder
1 egg, beaten
1/3 cup brown sugar
1/3 cup white sugar
2 tbsp margarine
1 large carrot, finely shredded
1/2 cup skim milk
1 tsp ginger
1/8 tsp cinnamon
1/8 tsp ginger
1/2 tsp allspice
1 tsp vanilla
Directions:
1. PREHEAT OVEN TO 350
2. IN LARGE BOWL COMBINE FLOUR AND BAKING POWDER WITH THE MARGARINE, USING A PASTRY CUTTER OR FINGERS TO BREAK INTO PIECES
3. ADD SUGARS, GINGER, CARROT, MILK, VANILLA AND SPICES TO THE MIXTURE AND THOROUGHLY
4. MIX WITH A WOODEN SPOON OR SPATULA
5. BAKE FOR 25 MINUTES AND LET COOL
