A zingy salad dressing. Makes 2 cups. Keeps in fridge for 1 week.
Ingredients:
1 cup grated carrot
1 tablespoon miso
1/2 cup rice vinegar
1 tablespoon mirin
2 teaspoons minced fresh ginger
1 cup grapeseed oil
Directions:
1. In a blender, combine all ingredients except oil and process on high.
2. Add oil in a steady stream until well mixed.
3. Refrigerate.
