Carrot Fruit Cake

It's a great way to dress up that old favorite carrot cake if you have those in your family who do not care for fruit cake.
Ingredients:
1 1/2 cups nuts (chopped)
1 cup mixed candied fruit (chopped)
1 cup dates (chopped)
1 cup raisins
3 cups all-purpose flour, divided
2 cups sugar
1 1/2 cups canola oil
4 eggs
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
3 cups carrots (finely shredded)
confectioners' sugar icing (optional)
Directions:
1. Combine nuts, fruit, dates and raisins with 1/2 cup flour; set aside.
2. In a large bowl, combine sugar and oil; mix well add eggs, one at a time, beating well after each addition.
3. Combine the baking powder, baking soda, cinnamon, salt and remaining flour, gradually add to sugar mixture, beating until smooth batter will be stiff.
4. Fold in carrots and fruit mixture and spoon into a greased and floured 10' tube pan.
5. Bake at 350° for 1 hour and 20 minutes or until a toothpick comes out clean.
