Top these good tasting cupcakes with cream cheese icing IF YOU DARE!
Ingredients:
1 1/2 cups sugar
1 cup raisins
2 carrots, grated
1 1/3 cups water
3 tablespoons shortening
1/2 cup walnuts, chopped
2 cups flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1/4 teaspoon salt
Directions:
1. Mix sugar, raisins, grated carrots, water, and shortening together. Boil slowly for 10 mins and cool.
2. Add walnuts, flour, cinnamon, nutmeg, baking soda and salt and mix well.
3. Place in greased cupcake tins.
4. Bake 350 10-15 mins.
