Carrot Corn Muffins

A different take on the usual corn bread type muffin, this is sweetened and has the added bonus of carrot, raisin and nuts.
Ingredients:
1 cup flour
1 cup corn meal
4 tsp of baking powder
1/2 tsp of salt
1/4 cup of firmly packed brown sugar
1 cup of grated carrot
1/4 cup of raisins
1/4 cup of chopped pecans
1 egg beaten
1 cup of milk
1/4 cup of canola oil
Directions:
1. Grease muffin tins very well.
2. Mix dry ingredients.
3. Add sugar, raisins and nuts.
4. Add egg, milk and oil.
5. Mix well.
6. Fill prepped muffin tins 3/4 full.
7. Bake in preheated oven 400 degree oven for 20-25 minutes.
8. Serve with whipped honey butter warm for breakfast.
