This is one of my favorite recipes!!!! AND IT IS SO GOOD FOR THE HOLIDAYS!
Ingredients:
12 carrots
1 small onion, small dice
1 tbs butter
1/2 cup butter, softened
1 egg beaten
salt and pepper to taste
1 clove garlic, minced
2 cups ritz crackers, crushed (optional)
1 cup shredded cheddar cheese (optional)
Directions:
1. Clean and cut carrots into large pieces. Cook in boiling water to cover, until soft. Drain well and mash.
2. Saute onions over medium high heat in the TBS of butter until very soft. In a large bowl, combine carrots, onions, 1/2 cup butter, egg, salt, pepper and garlic. Mix well.
3. Spray 8x8 dish with nonstick spary. Place carrot mixture in dish; top with crackers and cheese. Bake at 325 for 30 minutes or until heated through.
