A nice change of pace, something a little difference. Really, what vegetable doesn't love a cheese sauce?
Ingredients:
1/2 cup butter
1 small onion, chopped
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried mustard
1/4 teaspoon celery salt
2 cups milk
1/2 lb cheese, sliced
12 large carrots, thinly sliced, cooked till tender
buttered bread crumb
Directions:
1. Melt butter.
2. Add onion, flour and seasonings and stir until smooth. Gradually add milk. Stir over medium heat until thickened.
3. Arrange half of carrots in bottom of 2-1/2 qt casserole. Add cheese slices.
4. Top with remaining carrots.
5. Pour sauce over all.
6. Top with buttered.
7. bread crumbs.
8. Bake at 375 for 30 minute.
