I found this recipe years ago on . Makes an easy side dish! This is great if you have leftover cooked carrots. I've used frozen and canned carrot slices - whichever I've had handy.
Ingredients:
1 cup cooked carrot, mashed
2 eggs
1/2 cup ritz cracker crumbs
1 cup milk
1/2 teaspoon pepper
1 tablespoon sugar
6 tablespoons butter, melted
1 cup shredded cheddar cheese
Directions:
1. Preheat the oven to 375°F.
2. Mix together all the ingredients. Pour into a greased 8 inch square dish.
3. Bake for 40 to 45 minutes.
