Carrot Cake With Cream Cheese Frosting

This moist cake is one of my favorites.
Ingredients:
3 cups grated carrots
2 cups cake flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoon cinnamon
4 eggs
1 1/2 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 8oz can crushed pineapple with juice
1 cup chopped pecans-optional
cream cheese frosting
1 8oz package cream cheese
1 stick butter
1 teaspoon vanilla extract
4 cups confectioners' sugar
1 cup chopped pecans-optional
Directions:
1. Preheat oven to 350 degrees.
2. Grease and flour a 9 x 13 pan or three 9 round cake pans.
3. Sift together flour,baking powder,baking soda,salt,and cinnamon. Set aside.
4. In a large bowl, combine vegetable oil and sugar.
5. Add eggs and vanilla.
6. Stir in flour mixture. Mix well.
7. Add carrots,pineapple,and nuts(if using).
8. Pour batter into prepared pan(s).
9. Bake 30-40 minutes or until inserted toothpick comes out clean.
10. Cool completely.
11. Frosting:
12. Combine cream cheese,butter,vanilla and sugar.
13. Beat until smooth and creamy.
14. Fold in pecans(if using).
15. Spread on cooled cake.
16. Serve with whipped cream or vanilla ice cream.
