Carrot Cake With Cream Cheese Frosting

Ingredients:
1 1/2 cups vegetable oil
2 cups granulated sugar
4 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups grated carrots
1 teaspoon vanilla
1 cup butter or 1 cup margarine, softened
1 teaspoon vanilla
1 lb icing sugar
8 ounces softened cream cheese
Directions:
1. Beat oil and granulated sugar approximately 2 minutes.
2. Add eggs one at a time and beat inches.
3. Beat in sifted flour, baking powder, cinnamon, baking soda and salt.
4. Fold in carrots and vanilla.
5. Bake at 350° for 40-45 minutes in 9x13-inch pan until tester comes out clean.
6. Use an ungreased pan.
7. For frosting: Mix the ingredients with an electric mixer and then smooth over cooled cake.
