From Woman's Day magazine... what sounds to be a marvelous cookie bar. Serving size depends on how large you cut.
Ingredients:
3 large eggs
3.5 ounce jar of carrot baby food
3/4 cup brown sugar
1/2 cup canola oil
1 teaspoon vanilla extract
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon salt
1 3/4 cups all-purpose flour
2 cups grated carrot
1/2 cup raisins
1/2 cup pecans, chopped
Directions:
1. Line a 13x9x2 pan with aluminum foil, extending foil past sides of pan.
2. Spray with non-stick cooking spray.
3. Preheat oven to 350 degrees F.
4. Beat together the eggs, baby food, brown sugar, canola oil, vanilla extract, baking powder, cinnamon, allspice and salt.
5. On low speed, beat in the flour until blended.
6. Stir in carrots, raisins and pecans.
7. Spread batter in pan evenly.
8. Bake 22 to 24 minutes.
9. Remove from oven.
10. Cool completely.
11. Cut into bars.
