From a little booklet I had about 20 years ago.
Ingredients:
2 cups flour, do not sift
1 1/2 cups sugar
2 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup vegetable oil
3 eggs
2 cups shredded carrots
8 ounce can crushed pineapple in juice
1/2 cup chopped walnuts
confectioner's sugar, optional
Directions:
1. Grease and flour a Bundt or tube pan and preheat oven to 350.
2. Stir together dry ingredients (1st 6 ingredients) in a large bowl.
3. Add oil and eggs to dry mixture and beat with a wooden spoon to blend.
4. Stir in remaining ingredients.
5. Bake until cake tests done, about 50 to 55 minutes.
6. cool 20 minutes then remove from pan and cool.
7. Sprinkle with confectioners sugar if you like.
