This recipe is from . I am planning on making this for a dinner party I am throwing in honor of a friend who has been really successful with Weight Watchers. I'd like to print out a menu for her with the points values.
Ingredients:
1 3/4 cups whole wheat flour
2 1/4 ounces yellow cornmeal
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon salt
2 cups shredded carrots
1 1/4 cups water
3/4 cup golden raisin
1/2 cup honey
2 tablespoons vegetable oil
1 teaspoon vanilla
Directions:
1. Preheat oven to 350°.
2. Combine all ingredients given, in order, in large bowl.
3. Pour batter into two 9-inch layer pans or one 9x13 inch pan.
4. Bake until center tests done, approximately 25 minutes for layers and 30 to 35 minutes for 9x13 inch.
