You can leave out the carrot and add another 3/4 cup shredded cabbage if your low-carb plan does not allow carrots. The carbo rating will be the same.
Ingredients:
1 1/4 cups shredded cabbage
3/4 cup shredded carrot
1/4 cup grated red delicious apple
1/4 cup crushed pineapple in juice, drained
1/4 cup light mayonnaise
1 tablespoon lemon juice
cabbage leaves (optional)
Directions:
1. Combine first 6 ingredients in a medium bowl; toss well. Cover and chill thoroughly.
2. Spoon coleslaw into a cabbage-lined bowl before serving, if desired.
