Carrot Batter and Cream Cheese Frosting
Ingredients:
50 grams pecans or walnuts, toasted and coarsely chopped
270 gram grated raw carrot
1 1/2 large apple, peeled and grated
200 grams all-purpose flour
80 grams whole wheat flour
170 grams sugar
3/4 teaspoon baking soda
1 1/2 teaspoons baking powder
3 1/2 grams salt
1 1/2 teaspoons ground cinnamon
1/4 cup crushed pineapple
3 large eggs
120 ml safflower or canola oil
1 1/2 teaspoons pure vanilla extract
56 grams unsalted butter
110 grams cream cheese
3 tablespoons sugar
1/2 teaspoon pure vanilla extract
Directions:
1. Mix Dry into Wet and Carrot
2. Cook at 350 for 25 to 40 min depending on pan
3. Cool in pan for 10min then take out and cool rest of way
4. Mix Frosting and Spread evenly
