Carrot-Banana Oat Bread

Ingredients:

  • 1 1/4 cups quick oats
  • 1 cup flour
  • 2/3 cup sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 large egg
  • 1 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup nuts (optional)

Directions:

  1. Combine dry ingredients (and nuts if desired, I like sunflower seeds)in a large bowl.
  2. Mix together until smooth: beaten egg, banana, carrot, melted butter, peanut butter, vanilla, and lemon juice.
  3. Add this to the dry ingredients and stir just until moistened.
  4. Pour into a greased 8x8-inch square pan.
  5. Bake at 375°F for 45 minutes to 1 hour or until done.
  6. NOTE: Depending on the oven you may want to try 350°F.
