Carrot & Apple Salad

From a soybean recipe hand out.
Ingredients:
1 (8 ounce) can pineapple tidbits
3 cups grated carrots
3 cups grated apples
1/2 cup raisins
1 (10 1/2 ounce) package silken tofu
2 tablespoons honey or 2 tablespoons maple syrup
1/8 teaspoon cinnamon
chopped roasted soybeans (optional)
Directions:
1. Drain pineapple tidbits, reserving juice.
2. In a bowl, combine pineapple, carrots, apple and raisins.
3. Measure 1/2 cup reserved pineapple juice.
4. May need to add additional liquid (preferably fruit juice) to make 1/2 cup measure.
5. In a blender, puree the tofu with 1/2 Celsius juice, honey and cinnamon until smooth.
6. Pour over carrot mixture and toss to coat well.
7. Chill.
8. If desired, top each serving with chopped soy nuts before serving.
