Carrot And Almond Cake Or Muffin

It's a very moist cake and may crumble easily .
Ingredients:
150 g butter
150 g brown sugar
1 tsp vanilla essence
2 medium eggs
150 g grated carrot
80 g roasted almonds , chopped
180 g self raising flour , sifted
Directions:
1. Grease a 20 cm pan or 6 muffin pans .
2. Pre heat oven at 180 degrees .
3. Beat the butter and sugar until fluffy .
4. Add eggs one at a time .
5. Fold in the carrots , almonds , spices and flour .
6. Pour the batter into the cake pan and bake for 50 mins , or
7. into the muffin pan and bake 25 minutes .
