Carol's Pineapple Zucchini Bread |

Courtesy of my sister-in-law... Ingredients:
3 eggs, beaten |
1 cup vegetable oil |
2 cups sugar |
2 teaspoons vanilla essence |
2 cups zucchini, grated |
1 (8 1/4 ounce) can crushed pineapple, undrained |
3 cups flour |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
1 teaspoon salt |
1 1/2 teaspoons cinnamon |
3/4 teaspoon nutmeg |
1 cup walnuts, finely chopped |
1 cup golden raisin, chopped |
Directions:
1. Preheat oven to 350 F. 2. Place beaten eggs in bowl, add oil and blend. 3. Add sugar and vanilla. 4. Beat until thick and foamy. 5. Add zucchini and pineapple, and stir until blended. 6. Add remaining ingredients and blend well. 7. Place into two greased and floured loaf tins. 8. Bake for 35-40 minutes. |
